Roast Lemon Chicken Halogen Oven Ingredients

1 Medium Chicken
Brine
Butter
Salt
Pepper
Any other spices you want to add!

Roast Lemon Chicken Halogen Oven Method

First of all I brine the chicken for 24 hours. Submerge it in an 8% solution for 24 hours, then drain and dry. You don’t have to but I think it makes for a moister end result.
Into the cavity I pop a lemon cut into eight pieces. I loosen the breast skin and rub in some butter and some on top of the skin too. Not an awful lot.

I use the low rack and the collar. with the round dish underneath to catch the drips.
20 mins at 200 with the chicken upright. Then turn the chicken over and give it another 20 miins at 200.
Turn it back and give it another 10 to 15 mins to brown it nicely, then turn off the power.

Leave the chicken in the oven for at least 20 mins to re-absorb the juices. Then lift it out, carve it and serve. It’s lovely and juicy and moist and all the lovely stock is in the tray underneath.
I suppose at some point towards the end you ought to check it’s cooked but it always is. And the chicken is a small to medium sized one. Increase cooking time for a much larger one.
